Ingredients
For the Junket Custard
-
½ Junket Rennet Tablet
-
1½ teaspoons cold water
-
2 cups whole milk
-
4½ teaspoons granulated sugar
-
½ teaspoon vanilla extract
-
1 drop red or pink food coloring (optional)
For the Topping
-
½ cup heavy whipping cream
-
4½ teaspoons powdered sugar
-
Fresh strawberries, sliced
-
Additional powdered sugar for dusting (optional)
Instructions
-
Dissolve the tablet. In a small cup, dissolve ½ Junket Rennet Tablet in 1½ teaspoons cold water. Stir until completely dissolved.
-
Warm the milk. In a small saucepan, gently heat the milk to approximately 98°F (lukewarm). Remove from heat.
-
Add the flavor. Stir in the granulated sugar, vanilla extract, and optional food coloring until the sugar dissolves.
-
Add the Junket. Pour the dissolved tablet mixture into the warm milk and stir briefly to combine.
-
Let it set. Immediately divide the mixture among four serving dishes. Allow to stand undisturbed at room temperature for approximately 15 minutes, or until set.
-
Chill. Carefully transfer the dishes to the refrigerator and chill for at least 2 hours.

Prepare the whipped cream. Beat the heavy whipping cream and powdered sugar together until stiff peaks form.
-
Serve and enjoy! Top each chilled Junket custard with whipped cream and fresh strawberry slices. Finish with a light dusting of powdered sugar, if desired.
Junket Tips
-
For a firmer custard: Use one whole Junket Rennet Tablet instead of half.
-
Watch the temperature: Milk that is too hot can prevent the Junket from setting properly. Aim for approximately 98°F.
-
Keep it still: Avoid moving or disturbing the custard while it sets.
-
Make it your own: Try fresh raspberries, blueberries, or your favorite seasonal fruit.
A little Junket history: Before modern packaged desserts became commonplace, Junket was a beloved homemade treat. This simple, egg-free custard is a wonderful way to bring that tradition back to your table.
