Junket Peanut Butter and Fudge Ice Cream Bars

Layers of rich Junket® Fudge, creamy peanut butter marshmallow filling, and homemade vanilla ice cream come together in this indulgent frozen dessert. Finished with a drizzle of chocolate and peanut butter candy, these bars are a delicious treat for any occasion.

Ingredients

  • 1 package Junket® Vanilla Ice Cream Mix

  • 1 package Junket® Fudge Mix

  • 3 cups powdered sugar

  • 2 cups marshmallow creme

  • ½ cup peanut butter

  • 2 tablespoons whole milk

  • ½ cup semisweet chocolate chips

  • 1 tablespoon coconut oil

  • Peanut butter chips or Reese's Pieces, for topping

Instructions

  1. Prepare Junket® Vanilla Ice Cream Mix according to the package instructions. Transfer to a container and freeze for 1 to 2 hours, until partially firm but not completely set.

  2. Prepare Junket® Fudge Mix according to the package instructions. Pour into an 8 × 8-inch baking dish lined with parchment paper, spreading into a smooth, even layer.

  3. Refrigerate the fudge until firm.

Peanut Butter Marshmallow Cream

  1. In a medium bowl, combine the powdered sugar, marshmallow creme, peanut butter, and whole milk. Mix until a soft, dough-like consistency forms.

  2. Once the fudge has set, spread the peanut butter marshmallow mixture evenly over the fudge. The mixture will be very sticky, so lightly wet your fingertips to help press it into place.

  3. Spread the partially frozen vanilla ice cream evenly over the marshmallow layer.

  4. Cover and freeze for 4 to 6 hours or overnight, until firm.

  5. Run a knife around the edges of the baking dish to loosen the dessert. Carefully invert the dish to remove it from the pan.

  6. Turn the dessert right side up onto a parchment-lined baking sheet, keeping the fudge layer on the bottom.

  7. Using a warm knife, cut into approximately 2 × 2-inch squares.

  8. Microwave the chocolate chips and coconut oil in 20 to 30-second intervals, stirring until melted and smooth.

  9. Drizzle the melted chocolate over each square and finish with peanut butter chips or Reese's Pieces.

  10. Return to the freezer until ready to serve.
